Bruschetta with tomato and garlic

Bruschetta is a simple yet elegant dish that instantly brings a Mediterranean feel to the table. With just a handful of fresh ingredients, you create a snack that is crisp, juicy and full of flavour. Ideal as an appetiser, snack or side dish to a cosy dinner. This classic Italian recipe proves that simplicity is often best!


Ingredients (for four people)

  • 4 slices of baguette or ciabatta
  • 3 ripe tomatoes (preferably Roma tomatoes), finely chopped
  • 2 cloves of garlic
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar (optional)
  • Fresh basil, finely chopped
  • Salt and pepper to taste

 Preparation

Prepare the bread

Preheat the contact grill. Then place the bread slices on top and grill for 5-7 minutes, until golden brown and slightly crispy.

Make the topping

Cut the tomatoes into small cubes and put them in a bowl. Add the olive oil, balsamic vinegar (optional), basil, salt and pepper. Mix well. Let the mixture stand for a while to allow the flavours to soak in.

Rub garlic

Peel the garlic cloves and cut them in half. Rub the toasted bread slices with the cut side of the garlic. This gives a subtle garlic flavour.

Spreading

Spoon the tomato mixture generously onto the toasted bread slices.

Serve

Place the bruschetta on a nice platter and garnish with an extra basil leaf or a small drizzle of olive oil if desired.


Tips:

  • For extra flavour, finish the tomato topping with a pinch of grated Parmesan cheese.
  • Experiment with additions such as mozzarella, avocado or olives.
